Wanko Soba
"Hai, dondon!" "Hai, jan-jan!" Accompanied by the server's rhythmic chants, soba noodles are tossed one after another into your empty bowl—it is Iwate's Wanko Soba, a style that brings a smile to even the diners. This unique form of hospitality involves tasting bite-sized portions of soba layered over many bowls. There are various theories regarding its origin, and nothing is definitively known. Some stories suggest a Hanamaki origin, where local soba was served to a lord of the Nanbu clan and greatly enjoyed; others point to a Morioka origin, claiming that Prime Minister Taro Hara, a native of Morioka, once said, "Soba is best in a bowl (wan-ko)."
