Nakamuraya Karukan: Matcha
A refined karukan (sweet) born in Beppu, characterized by its pure white color and fluffy mouthfeel. This is the matcha version, a product that highlights the quality of its ingredients. Founded in 1952, Karukando Nakamuraya has continued to make sweets using only simple ingredients—yam, rice flour, and sugar—without any additives or preservatives. Peeling each yam by hand and grating it every morning is the labor-intensive process that creates that signature chewy texture. In this version, matcha is added to provide a pleasantly bitter aroma.
