We have transformed the tiles of Takamatsu Castle into a crispy, fragrant confection. 'Kawara Senbei' is a signature confectionery representing Soke Kutsuwado, founded in 1877, and serves as an iconic symbol of Takamatsu. Anticipating Takamatsu's prosperity as the gateway to Shikoku, the first generation founder, Shoichi Tamura, devised this specialty using local ingredients. The shape is modeled after the 'sode-gawara' (edge tiles) of Tamamo Castle (Takamatsu Castle). Using Sanuki specialties such as Wasanbon and Shiroshita sugar, along with high-quality flour and eggs, artisans carefully hand-bake each piece on an iron plate for approximately 20 minutes. The delightful crispness and elegant sweetness are truly addictive. This is a beloved classic, widely known as the quintessential souvenir of Takamatsu.
