Kaiundo Gishio
'Gishio' is a Japanese sweet created by Kaiundo of Matsumoto City, inspired by the historical anecdote 'sending salt to an enemy' (gishio o okuru). This refers to the beautiful story where the rival warlord Kenshin Uesugi sent salt to Takeda Shingen, who was unable to obtain it during the Warring States period. In Matsumoto, a Salt Market/Candy Market has been held every January in connection with this anecdote. Gishio is a confection that reflects that story, with a moderate saltiness that enhances its elegant sweetness. The sharp contrast of salt within the sweetness makes the history of the hometown come alive with every bite. It is a signature sweet worthy of Kaiundo—an established shop founded in 1884—allowing you to enjoy a sense of romance.
