Itochu Ichida-gaki Shibori
Created by Itochu in Iida City using the famous local specialty of Southern Shinshu, Ichida-gaki (dried persimmons), 'Ichida-gaki Shibori' is a unique confection. Ichida-gaki are persimmons grown in the Ichida area of Takamori Town that have been dried; it is said that they began being shipped under the name 'Ichida-gaki' in 1921 (Taisho 10). Their hallmark is their fine flesh and chewy texture. This 'Shibori' is a handmade jelly consisting of two layers—dried persimmon and fresh persimmon—allowing you to experience a jiggly texture and the rich umami of Ichida-gaki all at once. This is a seasonal item available only in autumn and winter. It is the very essence of Southern Shinshu's bounty, utilizing the natural sweetness of dried persimmons. As a souvenir that condenses the charm of Ichida-gaki, its elegant flavor is perfect for pairing with tea.
