Shinshu Rinosaka Kobo is a confectionery shop based in Iijima Town, Kamiina District, known for its sweets made using local ingredients. 'Noki no Hinata Gaki' uses dried persimmons, a specialty of Southern Shinshu, highlighting the concentrated natural sweetness of persimmons carefully sun-dried under the eaves. The sight of rows of persimmons hanging under the eaves of houses, known as 'Kaki Sudare,' is a seasonal tradition in the Ina Valley from autumn to winter. Its sticky, concentrated, and simple sweetness evokes a sense of nostalgia.
