A creative confection where Japanese and Western flavors meet, combining chocolate and chestnut with the famous Ichida-gaki persimmons from southern Shinshu. Ichida-gaki is a dried persimmon produced in the Iida-Shimoina region and is registered as Nagano Prefecture's first regional brand, with a cultivation history said to span over 500 years. Shinshu Satono-ka Kobo has filled these Ichida-gaki with a ganache made of chestnut kintan (sweet chestnut paste) and chestnut shochu, then coated them in chocolate. The natural sweetness of the dried persimmon, the chocolate, and the chestnut harmonize like a trio. This is a luxurious item that can only be tasted here, where Japanese and Western ingredients overlap. It is an exquisite choice that pairs well with alcohol such as red wine and makes for a special gift.
