Kaiundo Shinmitou
Kaiundo is a long-established Japanese confectionery shop in Matsumoto, continuing since Meiji 17 (1_884). One of its signature sweets is 'Shinmitou'. It is a Japanese-style nougat made with walnuts and honey. It is said that the sweet was devised in the mid-Taisho era and named 'Shinmitou' by Grand Master Dantan-sai of the Urasenke school at a tea ceremony held in Matsumoto during the early Showa era. Since then, it has been cherished as a prestigious sweet representing Shinshu. The chewy texture blends the fragrant roasted walnuts with the gentle sweetness of honey. It is an elegant and profound Japanese sweet that the castle town of Matsumoto takes pride in. The history of being named by a tea master speaks to the dignity of this confection. A representative sweet of Matsumoto, suitable for tea ceremonies, it is also highly recommended as a gift for important people.
