Tochio Specialty: Aburaage
A jumbo-sized deep-fried tofu (aburaage) measuring 22cm in length and 3cm in thickness that is sure to bring a smile to your face. Tochio aburaage is a local specialty with a history of over 250 years. It is said to have originated as a souvenir for visitors to Akiba Shrine, which is revered as a deity of fire prevention. Blessed with high-quality water, the land of Tochio has nurtured large and fragrant aburaage from its soybeans. The key is the unique 'double-frying' method used only in Tochio: first, it is slowly fried at a low temperature, then quickly fried at a high temperature. This process results in a crispy exterior and a fluffy interior. When grilled and served with soy sauce or condiments, it becomes a true delicacy. In the Tochio area, you can enjoy it freshly fried, and it is beloved as a Niigata soul food.
