Shinryoku is a seasonal namagashi (fresh sweet) from Toraya, a long-established shop dating back to the Muromachi period. Through agar and bean paste, they have reflected the scenery of the four seasons. A dish for early summer that evokes fresh, young leaves. You can feel the transition of the seasons in its smooth melting texture.
