Yanakao Noeisen Ukikusa
With a single bite, the subtle aroma of slightly spicy ginger gently wafts through. The crunchy texture of the sugar-coated surface meets the gentle sweetness of the moist dough, creating a lingering deliciousness. Yanaka was once a famous production area for 'Yanaka Ginger,' and the area around this shop used to be filled with ginger fields. 'Ukikusa' is made by hand-grating each piece of that ginger and kneading both the juice and the fibers into the dough. It is said that those very fibers are what create its unique shape. Finally, each piece is coated individually in sugar. Founded in 1900, this is a renowned confectionery from Yanaka that has preserved its artisanal, handmade traditions. A deeply flavorful Tokyo souvenir with a large following even among professional Wagashi lovers.
