Ki-Hachijo Sablé
Crunchy, then crumbly. Upon entering your mouth, it dissolves like shortbread, spreading the aroma of butter and a hint of salt hidden beneath the sweetness. It is a deliciousness that makes it impossible to stop at just one. These sablés are shaped like kimonos, inspired by 'Ki-Hachijo,' the traditional silk fabric of Hachijojima Island. Even that beautiful lattice pattern has been recreated. Made with simple ingredients—flour, sugar, eggs, salt, and Hachijo butter—each is carefully baked on the island without the use of preservatives or coloring. A rustic and warm baked sweet that has been loved as an island souvenir for over 25 years. Piece by piece, it is a famous confection from Tokyo's Hachijojima that makes you want to savor it while imagining the island breeze.
