When you split the softly baked skin, glossy grain bean paste peeks out as if about to overflow. The dorayaki from Nihonbashi Usagiya features a masterful balance of moist dough and juicy bean paste. With a single bite, you are enveloped in the rich aroma of plump adzuki beans. The history of Usagiya began in 1913 (Taisho 2) in Ueno, when founder Kisaku Taniguchi opened a Japanese confectionery shop. Nihonbashi Usagiya was established in 1948 (Showa 23) by his third son, who struck out on his own. Their method of using honey in the skin to achieve a fluffy finish has earned them a place as one of the 'Three Great Dorayaki of Tokyo.' When freshly made, the skin is soft, further enhancing the savory deliciousness of the bean paste. It is also exceptional when warmed slightly. This is a taste of Tokyo that has been loved across generations.
