Eitaro Sohonpo Nadai Kinga

When you split the toasted thin skin, moist smooth red bean paste is revealed. The flavor of the adzuki beans stands out vividly, and a profound sweetness spreads through your mouth. Eitaro Sohonpo was founded in 1818. Its origin lies in grilling Kinga at a food stall for the people gathered at the Nihonbashi fish market during the end of the Edo period. This confection, shaped like the guard (tsuba) of a sword, was originally called 'Gintsuba' (silver guard) in Kyoto. It is said that when it was baked using wheat flour skin in Edo, it turned gold, and was named 'Kinga' (gold guard) based on the idea that 'gold is superior to silver.' A famous confection born in Edo that continues to be baked today using methods unchanged for two hundred years. The fragrant aroma of being freshly baked is truly exceptional.
