Chidori Manju
The 'Chidori Manju' is a representative confection of Fukuoka. It is an adorable manju created by the meeting of the Portuguese-introduced Castella method and traditional Japanese white bean paste. Chidoraya's roots trace back to 'Shogetsudo,' a confectionery shop that began making Maru-boro and Castella in 1630 (Kanei 7). Inheriting that tradition, Chidori Manju was devised when the company expanded to Iizuka in the early Showa era. It has been widely loved by Chikuho coal miners craving sweets, as well as travelers seeking souvenirs for their hometowns. With its moist, thin skin and smooth, elegant white bean paste, it offers a gentle, nostalgic flavor polished by a long history where foreign techniques and Japanese spirit melt together.
