The Hiji River in Ozu is one of Japan's three great cormorant fishing sites, alongside the Nagara River in Gifu and the Mikuma River in Oita. The 'Awase-ukai' (combined cormorant fishing), where boats with torch-bearing masters and pleasure boats descend the river together, is a quintessential summer night spectacle in Ozu. The sweetfish raised in this river possesses an exceptional aroma and firm texture. A taste of clear streams available only during the summer.
