The crispy, briny aroma makes you want to eat bowl after bowl of rice. 'Ita-wakame' is an essential part of the Shimane dining table and is also known locally as 'Menoha.' The connection between the Izumo region and seaweed is ancient, with its use even recorded in the 'Izumo no Kuni Fudoki,' compiled during the Nara period. Each harvested piece of seaweed is carefully spread into a sheet and slowly dried at a low temperature to finish. Because it contains no added seasonings, its true charm lies in how it preserves the natural umami and sea scent of the seaweed. You can crumble it by hand to sprinkle over rice or lightly toast it as a snack with tea. It is a simple yet addictive bounty of the sea, unique to Shimane.
