Uzume-meshi (Masuda)
At first glance, it looks like plain white rice topped only with wasabi. However, once you dip your chopsticks in, chopped sea bream and vegetables suddenly peek out from the bottom—this is 'Uzume-meshi,' a mysterious local dish where ingredients are buried and hidden. Passed down in the Iwami region, including Masuda, this dish is recognized as one of Japan's five famous rice dishes. Vegetables are simmered tenderly in a broth made from grilled sea bream, placed in a bowl, covered with grated wasabi, and then topped with piping hot rice. The ingredients have a slightly richer soy sauce flavor than clear soup, paired with the aromatic sting of wasabi. When mixed, the umami of the broth and the sharp kick of the wasabi become one with the rice. The key to the flavor is the wasabi grown in clean, pure water. Beneath its simple appearance lies an unexpected feast.
