In the winter of Ine, where the Funaya boat houses stand quietly—the star of the season is "Burishabu," where fatty winter yellowtail is lightly swished in hot broth. It is a winter feast that offers the most luxurious way to savor the blessings of the Sea of Japan. Ine is one of Japan's three major yellowtail fishing grounds, alongside Himi in Toyama and Goto in Nagasaki. The winter yellowtail entering Ine Bay from late autumn to winter are perfectly fatty with firm flesh. When you dip the thinly sliced meat into hot dashi, it achieves a melt-in-your-mouth texture.
