A supremely fresh taste of spring, unearthed from bamboo groves before dawn. Nagaokakyo's morning-harvested bamboo shoots are a masterpiece from one of Kyoto's most famous bamboo-producing regions. The Otokuni region, including Nagaokakyo, is a renowned bamboo village said to be connected to the 'Tale of the Bamboo Cutter.' Because bitterness increases in bamboo shoots as time passes after harvesting, a tradition of 'morning harvesting'—digging around 5:00 AM before dawn and shipping within the morning—has been passed down here since ancient times. This is the result of meticulous craftsmanship, harvesting them just as they emerge from the earth. That is precisely why they are so soft and fragrant that they can even be enjoyed as sashimi. The morning-harvested bamboo shoots lined up at our sales office are a delight for those awaiting the arrival of spring. It is a flavor that heralds the coming of spring in Kyoto.
