The Otokuni region, including Nagaokakyo, is a renowned bamboo village said to be connected to the 'Tale of the Bamboo Cutter.' Because bitterness increases in bamboo shoots as time passes after harvesting, a tradition of 'morning harvesting'—digging around 5:00 AM before dawn and shipping within the morning—has been passed down here since ancient times. This is the result of meticulous craftsmanship, harvesting them just as they emerge from the earth. That is precisely why they are so soft and fragrant that they can even be enjoyed as sashimi.
