The Otokuni region, including Muko City, is a historic bamboo village believed to be the setting of 'The Tale of the Bamboo Cutter.' It is said that there has been a cultivation history of about 300 years since Moso bamboo was introduced from China during the Kamakura period. Through a labor-intensive technique called 'softening cultivation'—where straw is laid over the soil—the well-drained soil produces white and tender shoots. With minimal bitterness, they possess a delicacy that allows them to be enjoyed even as sashimi. Whether simmered or deep-fried as tempura, their aroma and sweetness are exceptional.
