Joyo Tencha
The city's finest tea, which serves as the foundation for matcha, is born here. Joyo Tencha (tencha) is a hidden gem that has repeatedly won first place in national competitions. Joyo City is one of the major production areas for Uji tea, with tea fields spreading along the Kizugawa River. Tencha is grown using the 'shaded cultivation' method, where tea leaves are covered to block sunlight before harvest. The resulting leaves, which accumulate plenty of umami components, are dried without being rolled to create tencha. When ground with a stone mill, it becomes that vibrant matcha. Having received the Minister of Agriculture, Forestry and Fisheries Award numerous times, Joyo Tencha is truly the best in Japan. Within every bowl of matcha, the meticulous tea-making traditions of Joyo live on.
