Smelt Tempura (Wakasagi Tempura)
Lake Yamanaka reflects the World Heritage site, Mount Fuji. A quintessential symbol of winter here is the plump, tiny smelt. As the largest of the Fuji Five Lakes, this lake is a famous spot for smelt fishing, boasting the highest number of dome boats in Japan. From autumn to early spring, the fish become rich with fat, and this is a place where you can indulge in the luxury of having a freshly caught fish deep-fried into tempura right on the boat. The batter is crispy, while the meat inside is light and soft, and you can enjoy the entire fish from head to tail.
