Ita-soba
A representative way to enjoy Yamagata's soba culture is "Ita-soba." The noodles are served in generous portions on a large wooden box or board. It is said that the origin of Ita-soba lies in serving soba on large boards or wooden doors so that everyone could eat together during breaks from farm work or at gatherings.
