Kujukushima Senpei
Founded in 1948, 'Kujukushima Senpei' is a representative confection of Sasebo. It captures the scenery of the 'Kujukushima' (99 Islands)—the large and small islands floating in the sea—within a single rice cracker. The hexagonal shape of the dough is modeled after the shell of a sea turtle, an auspicious symbol. The scattered peanuts represent the silhouettes of the various islands dotted throughout Kujukushima. Highly regarded for its crispy, fragrant baked dough and rich peanut flavor, it has won the Monde Selection Grand Gold Award for three consecutive years. The decision to name it 'Senpei' in hiragana (using the local dialect) came from the previous generation's desire to spread Sasebo's specialty nationwide.
