Yanagawa is a long-established shop founded in 1892, continuing its tradition of making sweets that utilize local specialties of the Tanba region, such as black soybeans, chestnuts, and adzuki beans. This Tanshin Baumkuchen is baked to achieve a uniquely moist and chewy texture using Tanba-grown glutinous rice flour and fresh local eggs. By kneading kinako (roasted soybean flour) made from Tanba black soybeans into the batter, the flavor becomes both fragrant and profound. The moist, chewy texture leaves a lasting impression.
