Shotani's Heart of Wa (Japanese Spirit)
Soft cookies crafted using Western confectionery techniques with Japanese ingredients. Produced by Cake House Shotani, opened in Amagasaki in 1995 by Mr. Shotani, who trained for about 15 years at Edelweiss's Antenor. These Japanese-style cookies melt in your mouth, featuring Japanese ingredients like Tokushima-grown Wasanbon sugar and domestic Kinako (roasted soybean flour) finished with Western pastry techniques. The gentle sweetness of Wasanbon and the aromatic fragrance of Kinako, combined with a soft, crumbling texture, create a happy encounter between East and West. An elegant flavor that pairs well with both tea and coffee. It is a perfect item for daily snacks or as a heartfelt gift.
