Owner-chef Susumu Koyama is an accomplished professional who has achieved the highest honors at the prestigious C.C.C. chocolate competition in France. He carefully follows the traditional Viennese method of sandwiching apricot jam between chocolate sponge layers and coating it in chocolate. Each slice offers a perfect harmony between the subtle acidity of the apricot and the intense sweetness of the chocolate. It is a luxurious cake that showcases the masterful skills of a true chocolatier.
