This is 'Shiomi Manju,' a signature confection from the long-established Sohonke Kankawa in Ako. The history of this salted manju dates back to the Genroku era of the Edo period; it was used as a secret ingredient for tea ceremonies by the Lord of the Ako Clan and served as an offering to the Imperial families of Kyoto and the Shogunate in Edo. It is a confection that inherits 300 years of tradition. Fine-ground sugar mixed with kanbai flour forms a white dough that softly envelops a special bean paste seasoned with famous Ako salt. The sparkle of saltiness within the sweetness provides a profound flavor unique to Ako, a famous salt-producing region.
