With moist yellow yolk bean paste softly wrapped in light pink gyuhi (sweet rice cake), its appearance is just like a camellia in full bloom. 'Tamatsubaki' is a famous confection long preserved by Iseya Honten, an established shop in Himeji that served as the official confectioner for the Himeji Clan. It is said to have been created during the Tenpo era when Kawai Sun'o, a high-ranking official of the Himeji Clan, commanded, 'Create sweets that do not fall short of those in Edo or Kyoto.' A craftsman who trained in Edo presented this gyuhi sweet, which Sun'o liked so much that he personally named it 'Tamatsubeaki.' The elegant and soft sweetness of the bean paste, made with fragrant white adzuki beans, is a flavor perfectly suited for tea ceremonies. It is a beautiful and refined Japanese sweet that carries the scent of Himeji's 300-year history.
