KOBE Gofukuro Ikanago no Kugini
When the sweet scent of soy sauce begins to drift through the streets of Kobe in early spring, it signals that spring is almost here. This seasonal delicacy, which quietly heralds spring in Kobe, consists of small sand lance (ikanago) caught in the Seto Inland Sea, simmered in a sweet and savory sauce. It is called 'kugini' (nail-boiled) because its cooked appearance resembles broken nails. Interestingly, the name 'kui-ni' is a registered trademark of the delicacy manufacturer Gofukuro, which has also led the establishment of the Kugini Promotion Association. The sweet and savory seasoning, enhanced with ginger, is incredibly appetizing. It pairs perfectly when placed atop hot white rice. It is the definitive rice companion that brings spring to the Kobe dining table.
