Escoyama Old-fashioned Butter Castella Castilla
Like a castella, yet like a butter cake—it is a baked confection with a mysterious flavor that is neither one nor the other. This recipe was personally arranged and perfected by the pastry chef of Escoyama in Sanda, based on techniques learned during their training. Using French acacia honey and Banshu local eggs, we have added plenty of butter to a traditional castella batter. As you take a bite of the moist cake, the rich aroma of butter spreads softly through your mouth, followed by the gentle sweetness of honey. This is a carefully crafted item produced in limited quantities each day to preserve its freshly baked deliciousness.
