Chef Susumu Koyama of Patissier Escoyama took the composition and dough of 'Alhambra,' a specialty from 'Swiss Confectionery Heidi' where he trained, and sublimated it through his own interpretation to create this 'Sou.' It is a treat featuring elastic, fluffy chocolate sponge gently sandwiched with milk chocolate ganache. Upon entering the mouth, the moist sponge and smooth ganache melt together softly, allowing the rich aroma of chocolate to spread. It is a confection with a profound flavor that allows you to experience the origins of a world-class chocolatier.
