Tomoya Salted Manju (Matcha)
A famous confection of Banshu, where Akō salt meets matcha. Salted Manju is a representative Japanese sweet from Akō, which was once known as a major salt-producing region. This exquisite treat features a texture similar to rakugan (pressed sugar), enveloping a filling infused with Akō salt, creating an attractive sweet and salty flavor profile. It is said to have been nurtured under the Akō lords who were familiar with tea ceremonies, and was even used as an offering to the Shogunate. This matcha version of Tomoya adds the subtle bitterness of matcha to that tradition. The umami of the salt, the richness of the matcha, and an elegant sweetness harmonize beautifully. With every bite, there is an exquisite balance where the salt gently emerges after the sweetness. It is a flavor truly characteristic of Akogi, perfect for accompanying tea.
