Akashi Tamagoyaki
A local pride of Akashi, said to be the root of Takoyaki. Known locally for a long time as "Tamagoyaki," Akashi Tamagoyaki has a fascinating history. It is said to have originated in the late Edo period, using leftover egg yolks from the production of "Akashi Tama" (artificial coral made in Akashi) and adding octopus, which was commonly caught in the area. Later, inspired by this, octopus-filled grilled dishes spread to Osaka, leading to the birth of Takoyaki. The savory flavor of Akashi octopus is embedded in a fluffy, melt-in-your-mouth batter cooked with plenty of egg. When dipped in dashi broth while piping hot, it gently dissolves in your mouth. It is a gentle dish that you must try first when visiting Akashi.
