Carbonated senbei (rice crackers) are a specialty of Arima Onsen, which is counted as one of Japan's three oldest hot spring towns. These are thin, baked crackers with a light and crispy texture that have been beloved in the hot spring town since ancient times. Since long ago, springs containing carbon dioxide have flowed in Arima, and during the Meiji era, an idea was born to use that carbonated water to bake the senbei. The characteristic method involves kneading flour, sugar, and other ingredients simply with carbonated water and baking them thinly. You can enjoy a light texture and a simple, gentle sweetness. A classic souvenir of Arima, full of hot spring atmosphere. It pairs perfectly with a piece enjoyed alongside tea after a soak in the springs. It is a warm flavor that has been loved for a long time.
