This manju, crafted by Sanmanko—a long-established confectioner in Koriyama—is an exceptionally elegant treat where the salt gently balances and softens the sweetness. It features chopped chestnuts enveloped in smooth red bean paste, encased in a dough carefully molded using glutinous rice flour. By incorporating salt into the preparation, the natural umami of the adzuki beans actually swells and becomes more plump.
