Biwazarame Castella

We have baked Minamiboso loquats into a moist castella cake. This is a special creation from 'Biwa Club' at the Michi-no-Eki Tomiura, hailing from the famous loquat region. Bushu loquats are a pride of Minamiboso, once presented to the Imperial Family. We knead homemade puree into the batter and layer granulated sugar (zarame) at the bottom before slow-baking. You can enjoy a double delight: the elegant sweetness of the loquat and the crunchy texture of the sugar. With the gentle richness of eggs and honey, it has a fluffy and moist mouthfeel. This baked confection tightly encapsulates the blessings of the Boso loquats that basked in the sun. It is perfect for tea time.
